The Recipe: Clam Chowder –Brik

This recipe is a favorite from my husband’s grandma’s family cookbook.

Ingredients:

2 6.5 oz cans minced clams

1 cup diced onion

1 cup chopped fine celelry

2 cups chopped fine potatoes

3/4 cup butter

3/4 cup flour

1/2 tsp sugar

1 1/2 tsp salt and pepper

1 qt half and half (or milk)

Drain juice from clams and pour over vegetables in sauce pan. Add enough water to barely cover. Cover and simmer until potatoes are tender, about 20 minutes. Melt butter, add flour. Blend and cook 1-2 minutes Add cream (or milk) and cook, stirring constantly until smooth and thick. Add vegetables and clams and heat through.

I’m so excited to start this new blog. I hope it helps you feel a little of home when you need it. I want you to know that I’m so proud of you. We’ve been there for each other our whole lives, and it’s been a little hard to see you go, but I’m so glad that you found Drew. He’s a good man and I know he’ll take care of you. I want you to know what an impact you have made in my life. (I’m crying as I’m typing this. You know I am.) It’s been an honor to watch you grow into the beautiful woman that you are today. Thanks for being a sister and a best friend. I love you.
