The Recipe: Cranberry Turkey Sandwiches and Tuna Macaroni Salad *Amanda

Cranberry Turkey Sandwiches


  •                     Sourdough bread
  •                     Cooked turkey breast
  •                     Cranberry sauce
  •                     Onion and chive cream cheese
  •                     Green leaf lettuce
  •                     Tomatoes
  •                     Sweet pickles
                   Spread cream cheese and cranberry sauce on a slice of bread. Put on lettuce, tomatoes, and pickles as desired.  Cut thin slices of turkey and put on top. Apply another slice of bread, and poof… you have a sandwich!!!

Tuna Macaroni Salad


  •                     2 1/2 cups elbow macaroni
  •                     1 cup mayonnaise
  •                     1 (10 ounce) package frozen green peas, thawed
  •                     1 (6 ounce) can albacore tuna, drained and flaked
  •                     1 cup diced celery
  •                     1 cup cubed Cheddar cheese
  •                     1/2 cup chopped red onion
  •                     2 tablespoons chopped sweet pickle
  1.                     Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain macaroni and cool under running water.
  2.                     Place macaroni into a large salad bowl. Stir in mayonnaise, green peas, tuna, celery, Cheddar cheese, red onion, and chopped sweet pickle until thoroughly combined. Chill and serve.

    I really cheated here. Our “sandwiches” came wrapped from McDonald’s, and I made some major substitutions in the salad. I think the peppered Mayo is where I went wrong. I did grapes in leu of peas, and bow tie pasta instead of elbow macaroni. It turned out good, but I was the only one who liked it.

    Drew and I really enjoyed both the sandwiches and the salad. I used ditalini pasta intead of macaroni, and we didn’t use peas. I put in extra tuna and cheese… yum. And I absolutely love these sandwiches! 4 stars *Amanda*
