The Recipe: Mini Corndog Muffins, Jell-O Oranges, Fruit Salad, and Mocktails – Brik

I’m in need of a meal that is kid-friendly, so I’m taking a break from something that I actually want to eat and preparing a meal that my kids (and husband) might actually enjoy. I think it should also be fairly simple, so this will be fun to try. Albeit, not the most nutritious thing in the world… C’est la vie.

Ingredients:

Hot Dogs

Jiffy Corn Muffin Mix

Favorite flavor of Jell-O

Oranges

Various fruits, i.e. kiwis, apples, strawberries,  etc.

Whipped Cream

Kool-aid

Gatorade

Sugar Free Sprite

Mini Corndog Muffins:

Mix Jiffy mix and pour into greased muffin tin. Add hotdogs, sliced to where they just barely poke out the top of the muffin batter. Bake according to directions on box.

Jell-O Oranges:

Cut oranges in half and scoop out the fruit. Mix Jell-O according to package directions and pour into orange peel. Refrigerate for at least an hour or until set. *I’m planning on doing the finger jell-O version* Cut into wedges.

Fruit Salad:

Cut and peal any fruit that needs it, adding in the fruit from the jell-o oranges, mix together with whipped cream, or just sprinkle a little sugar on top.

Mocktails:

The idea behind this is that the drinks with higher sugar content will sink to the bottom, so the different drinks will stay separated. We shall see if it actually works or not. Hey, look at that. We’re throwing in a science experiment with our meal. Educational and kid-friendly. I digress….Anyway, Pour some Kool-aid into a clear cup and add a little bit of ice *The ice supposedly helps to keep it separate*. Repeat with Gatorade (Use a different color or shade from the Koolaid), and then again with the sprite. The Gatorade must NOT be sugar free, and the Sprite needs to be.

    The corndog muffins turned out kind of crumbly, and most of them just fell apart. And the ones the kids ate (or just played in) ended up as crumbs all over my floor. Overall, though, I think the meal was a success. They at least ate the jello oranges…

    Great for kids for sure. The corn dog muffins taste just like corn dogs,even though they are crumbly. Our jello didn’t set, so we weren’t able to try them 😦 Not a bad meal, just something definitely for the kids. 2 stars. *Amanda*
